A neglected garden

We have just completed 18 in a house with a garden that has been neglected for years - sad because it was a plantsman's garden from first design.
Question 1 - heavily overgrown Winter Jasmine swamping other plants ... can I get stuck in with a hedge trimmer once the flowers are past? Currently very few flowers and little fresh green branches.
