Anyone got a good fruit cake recipe?

    I am looking for a reliable/nice fruit cake recipe if anyone can help? I'm not looking for one of the really rich ones that you would use for a wedding cake or Christmas cake, but more a general fruit cake that isn't too dry?

      Bara Brith? There are lots of recipes but this is the one I use.

      Dried fruit: self raising flour: brown sugar in the proportions 2:2:1
      Cold strong tea
      1 egg to each 1lb flour
      mixed spice to taste - I use 2tsp to each egg

      Put the fruit and sugar into a basin and add enough tea to just cover the fruit. Leave to stand overnight. (In the morning the fruit will have absorbed most of the liquid).

      Stir in the egg, spice and flour until well mixed and pour into a lined cake or loaf tin. The cake will rise so fill the tin only to about 2/3 of its depth.

      Cook at 160-180c (depends on oven) for about 1.5hrs or until a probe comes out clean.

      Here in Wales we usually serve it cold in slices which are buttered and often accompanied by a piece of cheese but it works just as well on its own.

        If I can find it, I do have one that is reliable. You need to read a bible though to get the ingredients. Which makes it different every time!

          I have used a boiled fruit cake recipe for some time that always produce a nice moist cake.
          This is one recipe, others are available but the principle is the same: http://www.food.com/recipe/fabulous-boiled-fruitcake-155227
          I use a dark brown sugar, and mix and match on the fruit front sometimes swapping some chopped nuts for fruit. I also change the spices sometimes using ginger, cinnamon, nutmeg depending on mood.

          We find that this is an extremely popular and easy to make cake (usually sell it on Open Day as a gluten free option). You can find lots of versions of it on the net.

          Molly Cake


          This wonderfully moist and fruity cake contains no refined sugar or fat. It's also free of eggs and dairy products, which means it's suitable for vegans, or anyone who's trying to cut down a little in the New Year.

          Preparation time:

          15 minutes

          Cooking time:

          50 minutes, plus cooling

          Total time:

          Serves:

          8 - 10

          Ingredients

          • 250g stoned dates, roughly chopped
          • 300ml water
          • 85g plain flour (I use gluten free)
          • 3 tsp baking powder
          • 1 tsp ground mixed spice
          • 85g wholemeal flour (I use gluten free)
          • 500g bag dried, mixed fruit
          • 50g ground almonds
          • 80ml orange juice
          Method

          1. Preheat the oven to 170°C, gas mark 3 and line a 900g loaf tin with baking parchment.
          2. Put the dates and water in a pan and bring to the boil. Remove the pan from the heat and set aside.
          3. Sieve the plain flour, baking powder and mixed spice into a bowl. Add the wholemeal flour, mixed fruit and ground almonds and stir to combine. Stir in the wet date mixture and the orange juice. Mix well.
          4. Spoon into the loaf tin.
          5. Bake for 45-50 minutes, or until a skewer comes out clean.
          6. Turn out onto a wire rack and cool.

              Thank you - recipes copied, and will all be tried in due course; the gluten free one is a particularly good idea for the next time we have family over as sister in law is gluten intolerant (unlike me who is just plain bloody intolerant :biggrin:)
