What did you have for dinner?

@longk Do you find lumaconi any different to conchiglioni for holding the sauce?

 

Yesterday was a mix of food as we had one guest who is vegan, gluten free and lacto-intolerant.

For non-carnivores there was a simple lentil and nut roast with courgettes and peppers cooked into to it,
Roasted butternut squash done with freshly ground cumin and sumach,
Puy lentils simmered in stock with a garlic clove and a bay leaf,
Roasted cauli steaks with crispy fried onion strips
Jacket potato with home made houmous.

I had medium rare rib eye steak pan fried in butter and chopped chillies.

 

Sounds good but I don't eat olives, capers, chorizo or prawns. The rest of it sounds good!

 

Last night was a simple chicken casserole, with chicken thighs, onion, garlic, herbs, tomato, celery, turnip, French beans, sweet peppers, chilli, carrots, courgettes, mushrooms and whatever was edible within arm's reach. Made enough for two of us for three days. Approx. £7.50.
