Whilst I'm waiting for the rack of lamb and the roast chicken to cook I have been making a chicken curry that will be enough a few days.

As I eat my main meal ie dinner at what you call lunchtime.. :)

My Sunday dinner was a Supervalu ready meal, which I treat myself to once a week as it is lovely to eat what you have not cooked... With M.E , you find that cooking a meal can render you too exhausted to eat it. lol... Yesterday was Irish cabbage and bacon ( ie what we would call ham or gammon. Bacon here is called rashers. A mistake we all make once!) Comes with mashed potatoes, cabbage, mashed carrot/swede mix, generous slices of meat, and white sauce. Cabbage is rare for me as a whole one is too much so this is perfect!

Today's main meal is a- simmering. Yet another big pan of chicken soup. Easiest and tastiest thing to make. Chunk of chicken, breast today, whole onion halved skin left on for colour,, apple chopped in half, a couple of carrots roughly chopped, a slew of lentils... Water to over. Simmer .... when ready, with a fork remove the meat, or leave if preferred , fork out the onion skin, then blitz the rest as smooth as you want it. seasoning is up to you; I use salt only. A staple here in this cold and long winter.

I don't use salt when cooking never have but last few years hubby has moderately high blood pressure, so can't use it.

Just cut up and portioned the Turkey that we had yesterday, got 22 meals from it.
