                With pleasure!

                Base:
                300g of shortbread (not to be confused with shortcake!)
                100g melted unsalted butter

                Filling:
                600g full fat cream cheese
                120g icing sugar
                300ml double cream
                75ml lemon juice (about 3-4 lemons) - zest them before juicing and save the zest for the top.

                Topping:
                Lemon cake topping sweets/jellies (I got them from Amazon), or candied lemon slices
                Lemon zest sprinkled

                Grease and line an 8" springform tin

                Crush biscuits to a fine crumb, add melted butter and combine well, then press into the base of the tin.

                Add cream cheese, icing sugar & double cream to a bowl (preferably the bowl of a stand mixer); zest your lemons (saving the zest) and then juice the lemons in with the cream cheese etc then mix with your mixer, increasing the speed until fluffy and forming stiff peaks.

                Add the mix to the base with a spatula, sprinkle your zest and chosen toppings, then refrigerate for at least 3hrs to set.

                      Ooof this sounds as good as it looks! Probably need the decorations on the top to be insulin, a statin and some gaviscon though! Worth the calories I reckon.

                          Considering the fact that without my help, you wouldn't have won, and you probably can't wait to send me a Lemon Cheesecake, however, seeing the ingredients, sorry, I couldn't eat this.
                          It's like Ina Garten from Foodnetwork. "To give it bit more texture, we add a cup of butter, a cup of double cream and a cup of oil". :biggrin::biggrin::biggrin:

                            It is heavy on the dairy for sure and not one I'd make very often admittedly. I am a sucker for cheesecake though, so when I make a better one, I will need to work out logistics to get it to Wiltshire ;)

                              No need for that. I’m on a diet for medical reasons (only) :)

                              BTW, we had customers that sent thank-you’s to our office. The highlight was an original Swiss cherry cake from Switzerland. I had helped him to get a video finished which was for the wedding next day :spinning:
