I suspect 1 and 3 are climbers which are common in the US but not in the UK. 2 looks like it could be a clematis but th stalks aren't right.
Yes, they have sometimes over-wintered for me, but not seen anything this year. However, the plants don't seem to do as well as freshly-sown ones....
They will definitely need strong canes. leave them like they are and one morning you will wake up to find them fallen all over your nice clean...
