I’m wanting to eventually plant a beech hedge and I’m lucky enough to live close to a large beech woodland.

This year there are a lot of seeds that have germinated and are at the two leaf stage.

Do you think they could be successfully pricked out and transplanted to pots for a year or more before planting?

Yes it's easy to do and they readily transplant. You need to put them in a very deep pot or ideally in a nursery bed for a couple of years as they put down long roots.
