I think you need to be careful how much you take, I seem to remember a gallon for a full grown tree being the limit, you then have to have a bung to fit in the hole, so as to stop the tree losing too much sap.
But thats just what I seem to remember from a wine making book I had a long time ago.

If anybody's thinking of making Birch sap wine, thoroughly check out the ingredients, as many online recipes are completely wrong and don't include enough sugar (maybe they're confusing Birch sap with Maple syrup?).

Even the 'River Cottage' website got it wrong.

Thanks all, i wont be making wine, im not a wine drinker, i was hoping to just drink it fresh out of the tree, kind of like my own tap lol, i love coconut water but its so expensive, if this birch water tastes half as nice as coco water id be happy for a free source :)

im aware of the need to plug the tree after, there is a nail all ready in the tree, looks like its been in there years, this might be a previous attempt at tapping it?

When I was a kid a nail in the tree usually indicated some one trying to climb it.

I think to tap it you need a hole a bit bigger.
