I've got some courgette plants (defender I think) in a raised bed that don't look very happy at all. There's little leaf growth and the leaves are very thin. I water them most mornings but I'm worried there's something else wrong. Any ideas?

They are producing so I'd guess they are under fed?
I've put a two weekly tomato feed into the base of mine and they're lovin it..(so far)

The photo does show some chlorosis of leaves. IMO the plants appear to close togetehr, but that wouldn't cause your problem. Courgettes require a soil pH of 5.5-7.0
I'd check this first. If needed, then try and establish a soil pH as indicated. THEN consider feeding the plants.

The bed appears to be lined with polythene?
Does that go underneath as well?
Just wondering what depth of soil you have there.
I go along with what has already been said, they look a bit starved.
They are pretty gross feeders when going well.

        We all have to learn.

They are far to close together.
They like loads of room, water AND feed ,they do look very dry.
I suppose you could move them carefully, but there would be a risk.
        Good luck.

I agree with above comments about needing some feeding. The soil in that raised bed doesn't exacly look rich in organic matter, more like the impoverished soil in my daughter's garden where I dug holes and added about 10L of well rotted compost when planting out each courgette.

If you have tomato feed, I'd use it at least once a week, plus some seaweed fertilizer if you have it (always buy some if you you see it reduced at the end of season).

I forgot to add that some varieties of courgettes that produce yellow fruits have yellowish leaves, that cause some gardeners to think they have a problem, but that's not the case here.
