Anybody know why wine recipes often use wheat in the mix. For flavour or for something else?

Mainly for nutrient for the yeast. A lot of flower type wines have the flavour but not enough organic matter for the yeast to feed off.

Often substituted by yeast nutrient, which you can buy in brewing shops.

Thanks for the info. Looks like yeast nutrient then.
