In my opinion you need to do it now, making Nettle tea will take too long.Reason for not doing it later is Nitrogen will stimulate soft growth, and you want the plant to have time to harden that...

Chickens? Do they need to overwinter indoors? Ours wander the garden Summer or Winter, Rain or Shine ...I would have thought they would have wrecked any plants in a confined area - scrabbling...

Taking the bottom leaves off might improve airflow around the plants. It`d be less favourable for fungus and keeping leaves off the soil is good from a blight point of view. Toms dont need light...
