I am often puzzled by modern life.

    Probably something to do with climate. Rice originated (I think) in the tropics where it's hot and wet. Wheat and maize (corn) are better in a more temperate climate, oats and barley will grow where it's cooler, millet, hot and dry.

      I see how it started out in pockets, but the spread and take-up is quite surprising, as is the fact it is still a staple for billions, despite the downsides.

      Still, there we are. :)

        Also the fact that people move from one part of the world to another and often bring their food ideas with them. Indian, Mexican, Italian and so on and it catches on with others of a different food regime.
        The UK used to be famous for "boring food" but that is no longer the case. Ignoring the crap we can still buy but that infects a lot of other places too these days.

          I'm just wondering what the crap is we can still buy.

          Some people still like British food, but TV food programmes always seem to show foreign food, masses of spices and all kinds of things to make something that is really tasteless, tasty.

          In the UK we get a lot of stick but we are probably one of the countries that takes on everyone else's culture and food.

          I'm sure places like Italy are not full of curry houses and chinese.
          Likewise is China full of curry houses and Italian restaurants.

            I have a recipe for sausages and Puy lentils, the lentils being cooked with onion, celery, carrot and some herbs.
            Trekking in Nepal I had some really nice lentil dishes, several different varieties of lentils cooked a bit differently in each case.

              Curious thing, but in the middle ages a lot of spices were used in English cooking, in part to disguise the fact that the meat was not of the freshest.

                I did hear that before but mostly from Indian cooking.
                My grandfather spent a bit of time in the army in India and according to family that is what he said the spices were for, covering up the fact the meat had gone off in the heat.

                  I have seen lentils widely eaten in India and Bhutan. There a very many different types of lentils and, apparently, black lentils (Urad Dhal) are the most nutritious. They are high in protein, iron, calcium and potassium. It is very popular and mixed with mild spices is delicious.

                  I understand that the biggest producer of lentils is Canada.

                    And on a horticultural note, I understand that, like a pea or a bean, each lentil plant produces lots of pods but each pod only contains two lentils. Apparently they are a complete bore to harvest.

                                Well wasn't that serendipity. I visited one of my grocers and as going through the self check out, I and the clerk in charge of the area got into a discussion about gluten free flour recipes with rice flour as the base. She being wheat/gluten intolerant is now going to look up the cup for cup mixture. If she can remember. So in case she forgot the reference website I gave her, I'll take my gluten free recipe binder back there and let her photograph each page. How fun is that. :) And I was diverse compliant, I didnt look anything like her. :)
