The safest way to learn about what's edible and what's deadible is to go out with someone who knows. There's lots of edible mushrooms and only a realtively few toxic ones, but in a few cases the difference isn't all that obvious.
We pick two varieties of wild mushrooms, but we really do know how to recognise them after being taken out picking them many years ago. Descriptions in books (or the web) really are not good enough to ensure 100% safety.

Make sure there is absolutely no possible confusion with poisonous species, or indeed sub species, as with Honey Fungus.

Avoid all Cortinarius family as a lot of books list these as edible, even though you could drop dead 17 days later.

As its been said, there are relatively few fatal species compared to the edibles, but there are no second chances. No saying "But I thought it looked like...."

Can't say that if you wake up dead.

 

As the saying goes..... All mushrooms are edible, but some are only edible once !

A few years ago a friend brought us one collected from inside the steel works in LLanwern where there were plentiful.

 

Poor Liu & Tsou from China... not too much of a mushroom lover myself but one good lesson is that never eat a mushroom unless you're 100% certain that it's safe.

 

I love looking for mushrooms (fungi) in Autumn - fascinating - but there are so many species you really have to know your stuff. I partook in a Ch4 prog in the late 90s with a coachload of punters from the local 5* hotel in the New Forest, led by Roger Phillips and collected the red and white Amanita. They are highly prized in Lapland (worth one reindeer) for their hallucinatory properties!
You can't miss the Stinkhorn either (Phallus Impudicus!) as you can smell it before you see it! I understand that it is edible but I think I would pass on that one. (Good candidate for a Bush Tucker Trial?)
I have found that Puffballs and Ink Caps (picked before they go 'inkey') are two you can't mistake. I am always wary of anything else.

There is one poisonous puffball so always check. Don't eat inkcaps with any form of stimulant, tea, coffee, alcohol, they can increase the blood flow to the surface & give you breathing problems.

Ate an Amanita muscaria & didn't throw it up like you are meant to do (cast iron stomach?)

Felt like death warmed up for 4 days, swear I could feel the red blood cells disapearing.
