Do you mean the curds or the leaves are going brown?

When curds go brown it might be soil nutrient deficiency - boron, which can be treated with borax but really you need to add it before planting.

A picture would help us diagnose.

Mrs Scrungee has just tried to buy some more Borax for cleaning, and was told the EU have banned it. Apparently it's now only available to buy online from China. (in addition to ensuring your cauliflower curds are white, it also helps whiten socks in the wash)

As well as cauliflowers other brassicas such as swede benefit from boron, as it is a trace element you don't need a lot of it. I use a sprinkle of borax every other year on the winter brassicas, helps to give tight brussels. It can also be found in products like Miracle Gro and Phostrogen. You need to look out for "trace elements" on the packet.
