Shallot and onion glut

    Hi everyone!

    Got a massive shallot and onion glut and don't really know if I can store them in my house as I don't think it has great ventilation. Does anyone freeze onions or shallots? Im hoping I can have shallots frozen whole or in half. Has anyone had much success with this?

    Have you got a shed Jane? They will happily come through a winter strung up and hung from the rafters?

    We have done so in previous years, they are good for cooking, we diced them and stored in lots of small bags.

    I'm no Delia Smith! but don't think raw onions or shallots freeze very well. I remember chopping too many onions and freezing the excess, they weren't too clever when I defrosted them, rubbery and a bit sour from memory. Personally I would maybe chop and part fry them and then freeze to use in stews, spag bols etc.

    I have but this sits in full sun in the garden and gets extremely hot inside this time of the year.

    We don't usually eat raw onions even with a fresh bulb. We stick them in sauces and stews/casseroles usually.

    I also store mine strung up in the garage but my father used to string them up and hang them from a washing line post and they used to keep into the New Year. That was in Lincolnshire.
    You could pickle the shallots if you like that sort of things.
