    Should I be adding some sugar to the pickling vinegar? Or is that only if I go on to use the juice after I have boiled the beets?

        I actually put a bit of sugar in the vinegar which is used in canning the beets. :redface: I guess it depends on how much you want to pucker :)

          Heehee, @CanadianLori - I do like a good pucker with my pickles (ooer!) so would not put any sugar in for my taste! By can see how it would improve the taste for others! Thank you!

            I remembered what I forgot as I was going through the checkouts at Sainsburys this evening - vinegar!!! :old:

                  Well, I didn't get as many beets as I had hoped for, but still managed two large (1.14 litre) and two smaller jars full of beetroot. Got three large jars of pickling vinegar left, so think I will do some eggs.
