      I don't see why not @Michael Hewett. Try it and see. If they lose their texture you can always make soup or stock.

      Possum will be late home this evening and has a pizza sitting in the fridge ready for a quick cook when she gets in. That means OH and I can have mushrooms with our pasta before heading off to dance class.

      I have a small tub of mushrooms that I dehydrated. What do I do with them?
      It seems a bit silly to rehydrate them and add them to a stew or something when I could've chucked them in before dehydration.

        @BB3 The point of dehydrating mushrooms is to be able to conserve them and use them later. If you dried them today then using them in a soup or sauce or stew does seem a waste of time and energy. If older, then go ahead and cook them.

        I only did them yesterday. Playing with my air fryer and some oldish mushrooms @Obelix-Vendée ,
        I think it's a program I won't bother with in the future.

          They will have a different texture to using them fresh. You could also grind them up in a spice grinder and use it as a seasoning on meat etc

          They will keep almost indefinitely if they are properly dried and you keep them somewhere dry.

              Pork for us too today @Hanglow but slow roast belly prok with crackling. Possum has asked me to make Yourkshire puds so I will but they'll have sage and onion in them for a change and to make them go better with the pork.

                    I agree that there are too many nitrites in those foods but a small amount shouldn't be much bother. We also get nitrites and nitrates in some veg but they are healthier than the artificial ones. I use a small amount of nitrate when making salt beef but if using brisket (the best cut for salt beef) you then need to boil it for longer than other meats and it removes some of that small amount.

                      I’m wondering now about our diet when we were young. We were both very keen on Spanish and Italian and French charcuterie and spent a lot of time trying different things both in delis here and in restaurants abroad.

                      Nobody in those days said anything about the danger of eating cured meats.

                      My OH got colorectal cancer when he was 60 and had to have his insides whipped out.

                      Quite by chance we both decided to stop eating meat not long after his operations.

                        Indeed, some veg are not recommended for young children due to the high nitrate content.

                        Nitrate transforms into nitrite in the metabolism which may be harmful.

                        Examples of veg not recommended for young children in Finland for this reason (I googled the latest recommendations):

                        Root veg juice
                        Certain lettuce plants including Rucola
                        Chinese cabbage, chard, kohlrabi
                        Radish, Celery, fennel, nettles (yes, they are a popular veg in spring, used like spinach)
                        New potatoes
                        Spinach
                        Beetroot (to be avoided until later in the childhood)
                        Fresh herbs and bean/ seed sprouts

                        (A disclaimer here, I never followed the guidelines when The Child was young. Don't tell her :biggrin: )

                        Personally I agree that processed meats should be used as flavourings rather than staple ingredients in large quantities in the diet. Nitrites and whatnots aside, just the amount of salt in them must be rather interesting for our bodies in big quantities.

                        Sensationalist headlines are another matter altogether :mad: They should carry a warning ;)
