Kitchen knife

    I've had this little veg/paring knife for a few decades now and the blade is just about finished. It's a 'Kitchen Devils' knife. The blade is only 6cm long and the handle 9cm. Can anyone help me find one similar please. I've done a web search but many, if they actually state a size, seem to get the sizing wrong. I doubt I can get a blade this small now but I'd like something close to it if possible.

    John Lewis has a paring knife with a 7cm blade which might suit @Sheal, plus many others.

      Edit: A quick look for now and that looks hopeful. I also like the Jamie Oliver knife.

        I bought something similar in Waitrose years ago, its still going strong and holds an edge fairly well, whether they still sell them I dont know.

          I have a similar one in red . Nothing fancy and got it at a place like Boyes or Wilkinson back in the day. Maybe B and M, somewhere like that today as I’ve not seen such a small knife for years now. I’d be lost without it. :rolleyespink:

            I'll be lost without mine too @Songbird. I hate to think how many times it's been sharpened and the blade is so thin now it's only a matter of time before it breaks.

            Edit: The blade you've pictured is a lot squarer than mine, I don't think I'd get on with that, sorry.

            Right o @Sheal. Worth a shot. These wee things mould to your hand shape over time dont they? I once left mine at a holiday cottage one year and had to ask the landlady to retrieve it for me….luckily she was a friend of my OH! I had to have it back.

              Mine is, I think, the same as yours, @Sheal . Kitchen Devil paring knife. Had it decades, and although I've got two more newer versions, of a slightly different shape, my trusty old favourite is the one I always turn to. The tip of the blade snapped off years ago, but it fits my hand, it feels like it's a part of me. I don't think they make exactly the same design any more, which is such a shame. I can't adapt to those with the squarer blade, either.

                Sorry, can't help with where to get them. We have quite a lot and have just found these five.

                I've had them for over 50 years and these get used regularly except for the one on the left which has the inch near the tip serrated. I tend to use the one on the right for almost all my small work and Mrs Shiney prefers those three in the middle. They get a very light dry sharpen with the sharpening steel fairly regularly and extremely rarely I use an oil stone to get a finer finish.

                The one on the right doesn't have a tapered edge apart from just the very edge but it is nearly twice as thick as the others, and is very rigid. I've never thought that they would wear out during my lifetime and your one looks as though it should have plenty more years in it. The edge looks as though it has been worn/sharpened unevenly. :noidea:
                It should be able to be corrected if there is someone near you that knows how. It looks as though it has been tilted slightly too much when sharpening whereas it should be kept pretty flat.

                There are probably many instruction youtube videos for how to sharpen knives. I was lucky to be taught in a professional kitchen and also used to teach how to sharpen scissors and cutthroat razors.

                I'm rubbish at sharpening garden tools :heehee:

                  Came across this at Nisbets which I've never heard of. Cheap and cheerful and at that price it's worth trying. If it's no good then back to John Lewis.

                  The only problem buying online is identification because it's a knife. John Lewis want facial identification and I'm not keen on that idea. I presume they want to count how many wrinkles I've got. :heehee: And Nisbets want my age but not sure how to go about that yet.

                    That's the one @Tinkerton. I agree with you about the knife or any kitchen utensils, we get comfortable with them. I don't like all the Chinese stuff that's for sale now, they've got horrible long, thick handles. I use a swivel potato peeler, the kind you hold like a knife, not those that you have to drag along the potato. That's also needed replacing, having actually removed the blade and turned it round to use the other edge. I've worn out both cutting edges so bought a new, similar one today. It works but it's got a thick handle and it's going to take a while to get used to it.

                      I've got an old sharpener similar to this. I won't use it though, that's Mr S's job because the noise puts my teeth on edge and I have to leave the room. To me it's a bit like fingernails down a blackboard.

                        My old Kitchen Devil, shown at the bottom of photo, has lost its point. I still use it for peeling and am always sharpening it. I like it better than the two new ones, shown at the top, that came as part of a set of five Kitchen Devils in a wooden block. The top one is good at piercing. And the second is good at general cutting.
