    my M E not good today, so for dinner just having hm ratatouille from freezer made from home grown courgettes, toms etc from summer harvest.

      Excess damsons ?
      Why not pickle some , in apple cider vinegar, with spices if this suits.

        Not many of you seem to ferment your vegetables? Beyond sauerkraut, almost anything can be fermented in brine solution (2.5-3%) Tasty tangy pickles without added sugar, no costly heating, whats not to like ?

          Damsons can be frozen as well. Yes they need to be stoned but not too hard to do. Also they make a good wine.

            Harvested a very large beetroot this morning whilst being battered by wind and rain. Keep forgetting about them! Peeled and sliced it then par boiled, cooled down and put in jars and cider vinegar added. I thought I would end up with 5 jars but only 3. Never mind still more out there. Thought the size would mean it would be woody but all good.

              With beetroot I find it easier to give them a scrub, cook in pressure cooker and then peel and slice once cooked, the skin comes off very easily at this point.

                No pressure here. Slow cooker for 6 hours, no smell, no mess, no steam. Allow to cool overnight, skin, slice,simple.

                  @NijelJ I too use a pressure cooker. I like the smell of what I cook. Saves a great deal of time and energy which is better for the environment. I use my pressure cookers for spuds and turnips and carrots and anything that is tough. And also stewing meats. I think it is the best for processing crabapples and other fruits for their juice to make jellies. :dbgrtmb:

                    Pressure cooker is used for things that take ages to cook, stock bones for soup, bacon joints, also Seville oranges for marmalade.

                      Thank you @NigelJ but no pressure cooker.
                      Thankfully pulled up some more carrots this morning before the heavy rain came back. Some for dinner and the rest in the freezer.

                        @On the Levels I wouldn't have bought one new as I would never use it enough, however I picked up a Prestige Hi Dome in good condition at a jumble sale 40 years ago it was less than a £1.00
