    I need some help from you guys regarding tomorrows banquet for one.
    I am starting off with crab in the morning. Roast chicken, roast spuds, broc, cauli, gravy, stuffing, rolls (currently frozen) for lunch. Chocolate log afterwards. Chicken sarnies for supper :)
    Can I peel my spuds tonight, to save time tomorrow? Do I keep them in water in the fridge?
    I can get my baps out when cooking the chicken.

      Potatoes are being peeled as i type, they will just sit in water until needed but I'll refresh the water before cooking:blue thumb: stuffing balls, swede and carrot mash, red cabbage and cauliflower cheese all made and waiting in the fridge, the rest will be done tomorrow. Soooo excited, I love Christmas :dancy: have a good one everyone:)

      Thanks @Loki :blue thumb:. So you put the spuds in water in the fridge, or just left on the side?

      Just on the side:blue thumb: no room in the fridge but I've always left them out anyway. Enjoy your festive food it sounds delish:)

        I find if you soak peeled spuds in water, they don't roast very well.

        Instead, I par boil them, drain them, and bung them in the freezer. They don't absorb as much water that way, and the surfaces crack, increasing the surface area that the heat and fat reach when roasting, making them extra crispy.

          It will be turkey tomorrow, and looking at the freezer, there may well be more turkey weekends in the New Year - mother in law works for a well known retailer that is now closed, and she purchased some of their remaining turkeys for the family, so we have a whole bird and a crown in the freezer alongside the extra boned and rolled breast which is a duplicate of tomorrow's joint. I won't allude to who the retailer is, but suffice to say that this is not just turkey.....

            Not the best thing to do :nonofinger: but should be OK in water in the fridge (change the water as often as possible). I'd recommend not doing them tonight as they won't roast quite as well as if they are done fresh. You should have plenty of time to do them whilst the chicken roasts.

              This post was last year. We didn't do it at Christmas but served dinners to the homeless on New Year's Eve. We did an eight hour shift.

              This year we're on our own for Christmas Day but I shall be working on the food for Boxing Day when we shall be having a load of people round.

              I've started on part of it tonight. One of the things I shall be doing is roast leg of lamb. I've just made the marinade for it with garlic, ginger, cumin, coriander (both these spices dry roasted and ground), paprika, olive oil, water, black pepper, salt and a pinch of sugar. The skin has been removed from the lamb, the surface rubbed with lemon and then coated with the marinade. It has been put in the baking dish, then the dish has been covered, tightly, with foil and put in the fridge for 40 hours.

              There'll be a separate marinade done for the chicken tomorrow as it doesn't need such a long marinating time. Everything else will be done on Saturday morning - apart from the cakes that Mrs Shiney is baking now (lemon drizzle and almond and orange - both gluten free).

              Tomorrow I'll have roast rib of beef and all the trimmings and Mrs Shiney shall have grilled, seasoned chicken breast with all the trimmings.

                Was also rolling through this thread, it was LAST YEARS 2014 CHRISTMAS DINNER thread.

                So for this Christmas Day dinner is planned : Lobster bisque, lamb roast, rosemarry potatoes (oven with cream etc.) and asparagus, pumpkin pie for dessert with whip cream.

                Right now for breakfast (its is only 8:30AM here ) have coffee and my Apple Walnut cranberry bread. Also have some
                Caramelized onion, goat cheese quiche to eat for breakfast, or whatever. We are actually thinking about going to a movie today, to see that new Star Wars. In IMAX 3D. only me is up, husband still sleeping, have not even opened our gifts. As it stands there 14 gifts between the two of us to open. So just sipping coffee here and relaxing.
