The seedlings seem a bit too leggy. I would have removed the cotyledons and buried them to the necks.
40cm is plenty of room for roses. This is purely an aesthetic decision.

Same here. Less than 3 good fruit each plant, either in GH or outside. Not quite worth growing.

I would think that bubblewrap is only good for a heated greenhouse (to reduce energy usage). Not much point to bubblewrap a cold greenhouse.

This would be a great great advantage. But what is the theory behind it? I think the reason for rotating/soil replacing is to avoid disease...
I am not certain but too much sugar may be an issue.
