This is a red lime plant grow from seed. It is 2 years old and just grows straight up with no side branches. There is a thorn in the leaf nodes instead of a young branch. How can I make it branch? Pinch the main shoot?

Yes - just pinch the top off just above a leaf - that'll force it to branch from the leaf nodes - with or without thorns.
