Giggle Cake

    Thought I would share a family favourite with you it is an easy fruit cake recipe with a difference

    Giggle Cake

    350g mixed dried fruit
    125g butter or margarine
    175g soft brown sugar
    225g s/r flour
    1 tsp baking powder
    pinch of salt
    2 eggs beaten
    225g can pineapple pieces drained
    125g glace cherries halved
    put the dried fruit into a large mixing bowl and cover with boiling water
    leave to soak for 10-15 mins then drain well

    Melt the butter or margarine and sugar gently in a saucepan
    add the drained fruit and simmer gently for 5mins stirring frequently
    set aside to cool
    sift flour, baking powder and salt into dried fruit and stir well add eggs and thoroughly mix add pineapple and cherries
    put into a greased loaf tin and bake at 180C for approx 1 hour

    I am doing wonders with my cider cake at the moment, but no doubt i will have to try this one as well !

    By the way...can anybody tell me why in some cakes one have to use baking powder and, in others, bicarbonate of soda?

    I made it this morning Miraflores and it is excellent. I couldn't wait until afternoon coffee and have already had a "taster" - mmmhhhh!!

    We had it for the first time when we visited Cuz Davris and Mr D in April and both Hubby and I just loved it. In fact, Davris had to make a second one while we were there, and we were only there for 6 days including to-ing and fro-ing.

    Why is it called giggle cake ,dont have all the ingred but when I do must give it a try.
