    homemade wine in small quantities: it is a simple process? Can there be health hazards involved?
    I think that the main work is done by the fruit or berries fermenting. Which fruits do you use? And what equipment?

    Made 5 gallons of Blackcurrant earlier, but that was from concentrate. Took about half an hour to make.

    Never use refined sugar, that produces methyl alcohol, which is nasty.

    Always use unrefined, like golden granulated.

    You can use most fruits & berries.

    I only use 'stuff from the hedgerows'. Brambles, crabapples, elderberries. I also use white sugar! This year has been */&$% for damsons (my favourite).
