wine and cider production

    Hi all,
    very fortunately right now I am privy to collecting from the odd apple tree, elderberry shrub/tree, plums etc. Wonder if firstly (as, although I am originally from Scotland I am very passionate about me coyder, erm, I mean cider) anyone has a method and recipe for cider production, and secondly wine production in general. Frankly, I ain't got a clue even though my wife is Russian and her family make the most fantastic and hellish strong wodka (vodka) so any pointers would be most welcome!
