I think chickens are likely to ruin grass in the winter. My grass is non existent in places where the dog runs, if it is wet and clayey and getting walked on all winter with even chicken pecking...

You just cut back any stems you dont want, so if you just want one stem leave the strongest and remove the smaller ones.I've never found them easy to root from side shoots but they do grow...
