good morning! Crikey, was tired yesterday!! Hope all the early risers have a lovely morning and there is some sunshine somewhere for you! have an excellent day and hope you all enjoy yourselves!

Morning all.

It's raining here. I wouldn't have been able to get out in the garden this morning anyway as I have been designated to cook tonight's dinner. Wifey has invited my mum and has instructed me to cook a chicken pie. I made one once which was rather yummy and now that's all anyone wants.

I'm no good at pastry so I buy it in readymade sheets. The pastry we have here today is in a block. I'm likely to make a mess of it. I'll definitely make a mess of the kitchen. I make enough mess when I cook as it is.

Anyway. I had better make a start. The base will need to go back into the fridge to harden before I make the pie itself.

If you want an absolutely scrummy pie:

Fry your chicken, onions, mushrooms, garlic etc. I add tomato paste, lemon juice and rosemary to mine.
Put the chicken to one side.
Fill the pan with white wine and let it reduce.
Add double cream (I'm using creme fraiche as its supposed to be healthier) and stir in until nice and creamy.
Return chicken and simmer.
When ready put all the contents into the pastry case.
Sprinkle in some fresh rosemary.
Cover with pastry lid and cook for about 45 mins.

That should keep me busy for a while.

@Jack Sparrow that recipe looks lovely. My OH doesn't cook and I'm always amazed by men who have these skills. Actually, I'm fascinated... And you reminded me that I have leftover pastry, from making a pumpkin pie, in the fridge and perhaps I should make something savoury such as your chicken pie.

It was raining when I got up and now seems to be lightening up - perfect for keeping the gardens watered and then being able to play outside. We had a long run of no rain so this is a bonus round of free water

I think I have a line on an industrial sewing machine to replace the one I had. I think it might be just as heavy as the one I had to drag out of here...
