Your part of the world is mainly fed from chalk aquifers. Some contribution from reservoirs, but we don't have enough of those.
I believe the map is referring to the hardness of the public supply.

Sorry but water cannot be dry, wetness is an intrinsic property of water.
Your supply can run dry, your tap can run dry, the ground can be dry, your hair can be dry, but not water.

I never understand how wine can be dry.
Shouldn't it be sweet or sour or bitter even, but not dry.

Depends on how long the bottle has been open and who is in charge of doling it out. :)

                    Message from SE water.
Yesterday, we treated and pumped 680 million litres of water in a single day, to keep up with demand!

This now makes it 16 days in a row where demand has been higher than average for June.

It means that we’ve supplied nearly 1 billion litres more water in the last two weeks, compared to June 2022.

So, we urgently need you to keep your water use to essential purposes only - drinking, washing and cooking.

                    Why compare with 2022?
It was obviously a wet June that year, I cant remember.

I've only just seen this thread. I picked up on this quote below from @Escarpment's link.

"One challenge is the fact that only around 1% of the country's infamous rainfall is captured in reservoirs"

I'm not sure whether this is a reference to reservoirs/lochs or both, but if there are reservoirs here I've not knowingly seen one.

I grew up in south east England and the drought of '76 and a few other years cured me of wasting water, I've always been careful with it. Here in Scotland my water is loch fed so very soft. We had drought here in the Highlands from the end of January to the end of May which is very unusual. I watered beds sparingly once every two or three weeks just to keep shrubs alive and even so have lost some. I only have three plants in pots outside and have never watered the lawn past or present, drought or not. July is quite often wet here but I'll have to see what happens throughout this month and compare that to the last few years.

Our promised rain for the weekend vanishes by the day. Each of the weather apps promised rain in litres spread over 5 days. Now they are talking about 40% chance of drizzle on Saturday.
