OK a rhetorical question but it helps to vent!
I put a trellis up a few inches away from my neighbour's slightly fragile-looking fence. I planted my trachleospermum jas. in front of my trellis. The bxxxxxs are ignoring my not incredibly expensive but easy climb trellis and climbing up the inhospitable looking fence behind.
A honeysuckle is climbing round the front of my pergola into full south-facing sun.
I've given up on a crassula. Every time I pinch out the top, it sprouts right beside the pinch to carry on to infinity any beyond.

Well the ones we want grow don't where we want them to do and those that we don't just take over.
      that is nature....

I planted multiple cosmos in 2 borders to create "consistency". Ahem. Usually one of them will be tiny for instance and the next one will be three times the size :lolpt:

          They take after gardeners.
Try an F1 variety if you can find one.

            Why are plants so stubborn?

Because gardeners are always trying to control their plants to do what they want them to do, grow where they want them to grow, how to grow. etc. Plants just do what is best for themselves.
Plant something in exactly the right location, position with the right care, food, light, protection etc. and it will thrive, look good, have no problems and you will love it.

....and then the wind, rain or a slug will come along and trash it .

But that is Nature, red in tooth and claw. You can take a plant to trellis but you cannot make it grow.

@BB3 I expect if you had planted the Jasmine against the fence, it would have crept round and gone on the new trellis quite happily just to spite you

A Clematis montana has grown through a large apple tree so that it can face due north and drape its long flowery tendrils over my neighbour's flower bed. Not a strand has taken up my offer of growing south and bestowing its beauty on my garden.

                          They're stubborn, you're persistent, I'm a free spirit

Plants just want to reproduce, although human selection and breeding of plants for gardening has often suppressed this, sometimes (e.g. in case of roses) resulting in quite dire habit or health resistance. For some breeders sterile plants are probably the dream result.

The line between prolifically self-seeding or spreading and a sulkily short existence is thin, and that's the one I toe.

I imagine a lot of plants are simply fed up with our constant interference - can't say I really blame them
