My potted container alliums flowered well this year, and are now going to seed. The strappy leaves are starting to die back and become unsightly. I'd still like to keep the alliums in the pot for next year, but if possible use the pot for something else this season.

When everything is completely yellow and died back, can I just remove all traces of the flowers above the soil (leaves, stems and dead heads), leave the bulbs under the soil for next year, and put some temporary shop-grown bedding flowers on top? Any recommendations for what I can do with the pot with the alliums underneath?

I think you are trying to do too much in one pot, how big is it.

I never mix plants in pots unless its planted up at the same time as a mixture , if you see what I mean.
I'd put you Allium pot somewhere safe for the summer and plant up another pot for summer interest.

I’ve just removed mine from their ‘nice’ pots and put them in a big plastic pot behind my Phlox so I can still see the heads and not the tatty foliage. The ‘nice’ pots will receive some strawflowers or sunflowers next month, then the allium bulbs can go back in the Autumn.
