Burns Supper.

    A work colleague has been to Alloa to do a job i asked him to bring me a genuine Scottish haggis back he kindly called into James Aitken butchers and now I have a lovely haggis, so I'm wondering what is the Scottish way of cooking it?

      Simmer it, very gently, in a pot of water for around 50 mins per lb (1¾ hours per kilo) - - do not boil it, or the skin will burst.

      Alternatively, you can cook it in the oven; pre-heat to around 190ºC, wrap the haggis in tin foil and place it in a suitable roasting tray or casserole dish, and cook in the oven for similar times to boiling (maybe a 10 mins more), until it is piping hot throughout

      Serve with boiled tatties and mashed neeps (swede); the swede is best boiled in small cubes in salted water, then mashed with a bit of butter and some white pepper. You can mash the potatoes if you like, but that is generally not the way they are served.

      You can also make a whisky sauce (cream, mustard, whisky, chives, salt & white pepper, and a bit of lemon juice)

          Tatties are better whole for haggis - in fact, some people even put a wee splash of vinegar in the water when boiling them (assuming you have peeled them) as it helps keep them firm. I am not a fan of haggis to be fair, but each to their own.

          To be honest I've only tried it twice before, those plastic wrapped ones from tesco, the last one I made a curry out of, but always like to try local originals where possible.

                  I love to 'faff' with Haggis ..I slice it and shallow fry it,make a whisky cream sauce and have mashed neeps and tatties..flipping luverly..:dbgrtmb:

                    that is what they had last night. except the haggis was not fry able, it kinda fall apart.

                      Its certainly something I would hope to do again. A year or two back I booked up for a Burns Supper with an overnight stay. Unfortunately the event was cancelled due to poor numbers. To complicate things now, Burns Night happens to fall on one of my granddaughter's birthday.
