    I was under the impression that the roasting of the beans made a big difference to the taste.

    When I was a kid we had a coffee shop in the main shopping street and they had a bean roaster in the window, the smell was something special even back then.
    They had shelves and shelves of different beans all with different roasts.

    We just had maxwell house.:biggrin:

    But do you want bitterness in your coffee to be dominant, some yes, but not as the dominant flavour note.
    There is also the temperature and length of time the water is in contact with the ground beans which affects the extraction of the different flavour componds.
