Homemade jams, pickles or chutneys 2019

    This one sounds nice:

    Summer Chutney
    The basis of this chutney is courgettes and tomatoes, so it's a brilliant way to use up any late summer veggies you may have in your garden without anything going to waste. Serve it with a big salad or take it on a picnic to serve with your sarnies.

    Ingredients:
    • 500g tomatoes, skin removed, chopped
    • 500g courgettes
    • 2 large white onions
    • 2 apples
    • 350ml white wine vinegar
    • 250g light brown sugar
    • 2 tsp. mixed spice
    • 1 tsp. mustard seeds
    • 4 fat garlic cloves
    Directions:
    1. Dice the courgettes. Finely dice the onions. Peel the apples, remove the cores and dice the flesh. Crush the garlic cloves.

    2. Put the tomatoes, courgettes, onions, apples, vinegar, sugar, mixed spice, mustard seeds and garlic into a saucepan. Bring to the boil and then reduce to a simmer.

    3. Cook for two hours until dark and thick. Add a little water if the chutney is sticking or burning on the pan.
    Skip the tomatoes and just use courgettes if you like. Large courgettes are fine to use, just make sure you remove some of the seeds as otherwise the chutney will be a bit watery. This recipe makes two standard 500g jar-fulls.

        Courgette Chutney

        Ingredients

        2kg courgette

        2 tart apples, peeled and cored

        1 large or 2 medium onion

        1lg green pepper or whatever colour you fancy

        2 lg or 4 small garlic clove, chopped

        1 teaspoon cornflour

        350g dark brown soft sugar or white

        or a mix of both depending how dark you want it.

        350ml white wine vinegar

        2 tablespoon peeled and chopped fresh root ginger

        1 tablespoon English white mustard seeds

        1 teaspoon crushed red chilli flakes or to suit your taste buds..

        1 heaped teaspoon sea salt


        Method


        Wash and roughly chop the courgettes and wiz in the blender and put into a large bowl..

        Peel and rough chop the onion and wiz in the blender and add to bowl with courgette..

        Add salt and enough cold water to cover stir and leave covered for 3-4 hrs..

        Chop up the pepper, apple, garlic and ginger and add to your pot..

        Drain the courgette and onion mix squeezing out excess water and add to pot..

        Add vinegar

        Mix teaspoon cornflour with cold water and pour into mixture and stir well..

        Bring to the boil. Reduce heat and simmer, uncovered, over medium heat until thick, about 30 - 45 minutes, stirring often. Ladle into warmed jars cover and seal..

        .. I used yellow courgettes so used Demerara sugar.. It made about 4lb of nice thick chutney.. :blue thumb:

                    carrot, courgette, red pepper, silverskin onions, chopped fresh onion, cauliflower, green beans,garlic cloves = the veggies.
                    turmeric, roasted cumin, green chilli, English mustard powder, mustard seeds, plain flour, white wine vinegar, oil, honey and salt....:phew: :thud:
                    all in various measures...
                    gotta keep our mitts off it for at LEAST 2 months - somehow. It'll sit in a dark cupboard out in the garage / out of sight...:whistle:

                        I just rolled them in confectioner's sugar so they were easier to handle.

                        I use a cheater recipe

                        1 1/3 cup apple sauce
                        2 packages of jelly dessert - can be sugarfree or regular. I use regular because I think it sets better and I only eat one piece a day now and again.. you'll see why
                        2 pouches of plain gelatin (about 1.5 tablespoon in each envelope)

                        Mix in a pot. Let sit a few minutes then put over medium heat to bring to a boil
                        Boil one minute

                        Optional: add CBD oil if you are looking for medicinal jellies - not to be eaten frivolously!

                        Pour into a lined pan or I use silicone candy molds.

                        Leave overnight. Roll in sugar if desired or not :)


                        I have never made a chutney. I have made relishes and should remember to do that again this year. :)

                          Good Lord....I was going to say I make piccalilli here when caulis are on promotion, but my recipe doesn't contain red peppers, and they certainly add some beautiful colour! But I got completely de-railed by this CBD oil business!:yikes: What's that stand for? What's it do? Is it legal? Could I use fresh lime juice and zest in those jellies?
