Kitchen knife

    I would never use one of those type of sharpeners on a paring knife as they are much too rough.

    @cactus_girl your favourite is the one I would choose to use for most jobs requiring a small knife. :thumbsup:

      Here's my Old Faithful. Completely knackered, but nothing else I've tried has come up to scratch!

        I used to have one of those and I never did find a good replacement. The newer ones have a different shape to both the blade and the handle, and the newer handles seem to be designed for huge hands so they're most uncomfortable for me.

          I can see that the edge needs smoothing. A water stone might be the right one for that.

              I tend to use a medium stone for getting a decent edge to start with (kind of regrind), and then I have a diamond rod type sharpened to hone the edge afterwards.

              Mostly its just a hone, with medium stone just very occasionally.

                I can manage the click @shiney but a 1200 mile round trip is pushing it a bit. :biggrin:

                I think it depends on how much pressure you put on the knife when sharpening, it's seemed to work fine so far. I/we would probably do more damage with a steel or stone.

                Usually sharpening on a steel or stone depends on the angle you hold the knife and the amount of pressure you put on it. :noidea:

                    They used to come with the claim that they were "the sharpest knife you've ever used". I cut my finger the first time I used mine... I love all 3 sizes I have; the tiny one you're posting about, which is great for really fiddly stuff; the next size up, with a thin straight blade which takes a good edge (best knife I know for thin slicing, eg cucumber) and a smallish serrated knife, great for slicing malt loaf... I've had mine all my married life. :smile:

                      Got one! :)

                      Dropped into Highland Industrial Supplies in Inverness today. They have a catering supplies department. I had to show my driving licence to prove that I'm over 18. Counting my wrinkles should have been enough surely. :heehee:

                      It's not the same shape as the old one (both together below) but it's the same length. The handle is a little bulkier but being shaped it's comfortable. I've not used it yet.

                          I've got one too which I've had more than 30 years. Any others I've tried just don't sit well in the hand, and/or have a thick chunky blade that doesn't cut well.
