Sounds like a very exciting time, infradig. You're on the brink of success.

I haven't tried crosses but I would imagine that it needs a human helping hand as the other posters in this thread report that stoned fruit trees do come true to seed.

Best to start early and think up a funky name for it just in case you manage to create a unique cross.

Nectarine and peaches can cross pollinate. I'm fairly sure they are the same species like courgettes and marrows, just ones furry and the others not.

I'm surprised people haven't had ripe apricots yet, both our apricots and peaches have been harvested and eaten already. The apricots three weeks ago and peach two weeks ago. The apricots are against a sunny wall but the peaches were out in the open in our exposed allotment site. All our fruit has been early this year, the gooseberries and currants probably 3-4 weeks.

I have a ".peregrine" peach and they are nowhere near ready, never have been before late August, possibly earlier this year but not yet, it seems very early.

We have a Peregrine peach, ours is in the greenhouse (in the ground). Our harvest is usually ready early August

I don't know the variety of peach we have as it was grafted from one I found on an abandoned allotment. Some do seem to crop in July so it might not be that early. I'm guessing it might not crop in cooler winters if it flower so early and is outside.
The apricot is moorpark, which is an early variety but not the greatest cropper for us. I've just picked up a later variety to see how that does.
