I thought it already contained brown sugar in the final mix.
    250 gr brown sugar.

@pete yes it does say that but I kept moving between different recipes (not a good idea) so some have the sugar and others don't. Will see in a month the outcome.

Strangely enough I came across a bloke in in the park this morning with a carrier bag full of walnuts, I shouted across to him,as you do, pickled walnuts

Yes he said not done any for a couple of years, I hope I've not left it too late.

He was slightly unsure of his recipe, but said he adds sugar as the ones you buy are too acidic.

Mine are drying off now and I may go for the cooking stage tomorrow.

just boiling up the walnuts, it looks pretty disgusting so I'm obviously doing it right, the sour smell has turned to a spicy smell now which is encouraging.

time will tell, if I can ever get rid of the black stains on all the plates without using bleach.

@pete I didn't boil the walnuts. After they had blackened I packed them into jars and boiled and simmered the vinegar with all the other ingredients and this was then poured onto the blackened walnuts and sealed.
Probably yours will come out better than mine.
          So many different methods!
ps I hope that the man you met in the park did pick walnuts and not young horse chestnuts!

            Yes he had walnuts.
Well I thought the recipe said simmer for 15 mins, so I gave them 20

            I always overcook stuff.

Its all in jars now, so we will see, still doesn't look very inviting.

The park has lots of walnut trees, apart from a few older ones a whole avenue of them were planted to mark the millennium, so those are over 25 years old now.
I thought at the time they were planted to close together and some are already showing signs of not being happy.

But they will want lots of extra reward to tell you where the pots have been put....

@pete no we haven't but have given a jar to our son (don't think he has tried them yet) and a neighbour who loves them but will wait until Christmas as that is the time he associates eating pickled walnuts.
I agree they don't look great but maybe they will taste better than they look.
