Pickling beetroot

    Might sound silly, but what is the best way to pickle beetroot? I assume it wants to be cooked (roasted?) first, and then sliced and whacked into vinegar, but is there anything else involved?

      Take one glass of red and sip twice. Put the beetroot in a big pan with lots of water and boil until the beetroot is soft and can easily be stabbed.
      Take several more sips of red, and refill glass.
      Peel beetroot (in the sink as it will be like a bloodbath) taking care not to ping it across the kitchen ....because it will stain everything it touches.
      Have a sit down and a large slurp of red.
      Chop beetroot into slices, squares, strips, or any other shape that takes your fancy. Be careful not to include any fingers as they will be hard to find in the red beetroot.
      Throw the glass away and guzzle some red directly from the bottle. Pack beetroot into prepared jars (with any finger bits) and pour white vinegar over.
      Don`t get the vinegar and the bottle of red mixed up. :drunk:

          I uss a pressure cooker. Whole beets take about 13 minutes. The skins will slide right off after this.

          Yes, slice, put in jars. I boil my beet juice with a bit of sugar and lots of vinegar then add to the jars and can (water bath method okay because of high acidity) as any other preserve.

          I've also made jelly with the beet juice. No one knew it wasn't a fruit jelly ... :)

            I use rubber gloves (the nurses type) when cutting Beet. Red wine is good advice:Wino:

              I am currently drinking red wine - only red by association though... blackcurrant jam wine, and very nice it is too. :ccheers:

              @CanadianLori - I have a pressure cooker (not used it much admittedly) - is it just a case of topping and tailing and then whacking into the pressure cooker with an inch or so of water?

              Are beetroot particularly difficult to do? Just wondering, given that the most advice seems to concur with the red wine suggestion? Or is it because you all think I have a drink problem?






































              (I do have a drink problem - two hands and only one mouth!)

                    @Tetters Thank you for taking the time to point out my typing error.

                    My goodness, I didn't realise that I should worry about a few typos. When I use my tablet sometimes I miss the errors and don't go back and edit.

                    I won't post again from my tablet. Unfortunately, the tablet is what I use during my leisure hours and when I have the most time to spend on the forum :doh:

                    Ooo no Lori, you certainly shouldn`t worry about a typing bleep :nonofinger: I was just having a laugh. I find it almost impossible to post stuff on my tablet - I prefer a keyboard (used to use an old Underwood at work about 98 years ago) and poking a screen with one finger is not for me :snorky:

                        Oh, I wasn't going to stop posting @Fat Controller , at least whilst using my laptop anyway... it just never occurred to me that typos are a point of humour over there. I guess I am a little too tight laced when it comes to what's funny plus I worry about insulting someone who has visual problems, or dyslexia or has literacy issues... I'll try to loosen up, but I don't think I'll ever unwind enough to make fun of others errors. Us staid and conservative Canucks :doh:

                        I have added sliced up onion to my beet juice, boil them until translucent then add to the beets. Yum :)

                        I didn't sow a lot of beets this year - what I pulled the other day, I pressure cooked, slipped the skins off and ate them all - gluttony, pure gluttony.. :biggrin: oh, and now I am "going" pretty in pink :heehee:
