What is burnt sugar?

    My mam has found an old, hand written, recipe written by her nanna (my great grandmother ).

    The recipe calls for "burnt sugar". Googling it turns up a company, and a band.

    Any ideas? I'm wondering if it's just caramel.

    It might be easier to work out if we knew the context within the recipe clueless :/ but I'd of guessed the same as you if it's a sweet recipe

      It's for ginger wine. I haven't seen the recipe, my mam just mentioned it, but I presume it's non-alcoholic because she said she enjoyed it when she was little.

      This isn't just typical caramelized sugar, it's burnt sugar. Sugar that has been heated to the dark caramel stage of 370 F to 400 F (188 C to 204 C). The sugar at this point has lost most of it's sweetness, smells burnt, and tastes kind of bitter. It's commonly called caramel colour these days. This is what is gives Cola's their dark colour. .

        @clueless1 if you happen to know anyone originally from the West Indies, they should be able to tell you where to buy it. Its used a lot in some of the typical food of that area.

        Otherwise its easy enough to make using rapeseed oil.
