What's Cooking Today??

Well done @shiney , thankfully we could neither cook or eat a roast in this weather....brave man !!

 

Not much as it's too hot!!
Hubs has just made us a Pitta Pocket each, stuffed with chicken and a mixed salad with a mustard dressing.
Just the job and very yummy!

 

I rustled myself up a nice Ploughman's lunch, was yum.

 

Breaded chicken breast with oven chips and baked beans.
Also made 3 jam tarts this is one of them.

 

Steamed fish with dill mashed potatoes, peas ,sweetcorn, green beans and carrots.

 

We still have hot meals with the hot weather but that seems a long time ago.

 

Jacket potato with Mexican minced beef.

 

Never!!! We might cook some chicken or fish and add salad., but that's all. We try and keep cooking to a minimum in the summer as there are other more enjoyable things to do. We only have a roast at Christmas .
If the weather is too diabolical to garden or go out for the day then we ( royal we ...mostly hubs) may have a cook up and freeze various toppings to go with pasta, rice, cous cous or baked potatoes.
I also cook up potatoes and mash them with various herbs then freeze in two portion containers.
So for instance today I wanted to do certain jobs in the garden ..and time was precious as I was dodging the rain. So steam some fish in greeseproof paper parcels in the microwave , steamed a selection of veg and thawed and reheated some herb mash.....10-15 minutes!!

Now that's our sort of meal Vicky!! Yum, yum.

 

What is a ploughman's lunch please?

 

A cold plate of food consisting of crusty bread rolls, ham, cheese ( hardboiled eggs if you fancy them) pickled onions and a selection of chutneys ( all the better if they're homemade) . You can't beat a good ploughman's in a good pub on a summer's day!!

 

Sounds lovely FC, although we don't eat a sweet, apart from yoghurt maybe.

 

Tuna with mixed vegetable rice and a beetroot ,carrot, red onion and cucumber salad in a lemon dressing.
