Just to chip in... I grow orchids from seed using fungus to start them off. Basically they grow in agar with oats as food for the fungus. The fungus is maintained by the Hardy Orchid Society, and then we can keep it by repeatedly innoculating new plates of oat agar and keeping in the fridge. However it is VERY complicated - the fungus we use happens to work to germinate SOME species, but then they need another one to grow on! We hope that when we take the seedlings out of the agar and grow them on in compost, they will pick up some of the other fungi (airborne?) to allow them to grow further. I think we are now realising that far more plants rely on a degree of symbiosis with fungi just to survive.

It almost sounds like how yeasts are kept going for brewing.
